~Happy St. Patty’s Day!!~

Hello again!!

Today was St. Patrick’s Day. Hope you had lots of fun and green ((and Guinness!!)). Pat and I celebrated our own little way – with a very green breakfast!! ((Nope, I do not mean a green smoothie – like he’d ever be able to choke one of those down 😛 – sorry for that, Pat lol..))

No, this green came in the form of….

PANCAKES!!!!

And they are the simplest to make!! No food colourings, no sugar, no eggs, and quite possibly one of your “5-a-day”!!

OK, I cheated a little.. using a Hale & Hearty mix – which just happened to be 4 different grains and baking powder. The mix is gluten-free, too!! Buuuut, I’m pretty sure you could use ANY flour/flour mix for this – in fact I plan to do just that 😉 and soon!!

So, here is the recipe:

Mean, Green Fluffy Pancakes

  • 180g pack Hale & Hearty 4-grain Pancake Mix / 180g Flour of choice and 1tsp Baking Powder
  • 200ml Non-Dairy Milk (I used Oat Milk)
  • 1 Flax “Egg” (- just mix about 1T ground flax with 3T water and let sit for 5 minutes)
  • 1 – 2 T Oil of choice
  • 1 or 2 big handfuls of Spinach!!
  • (Optional – cinnamon; stevia; sugar; vanilla; chopped nuts; chocolate chips!!; dried fruit; coconut..)

Simply make your “egg” and set to the side whilst you prep the rest.

In a blender, pour half of the milk and the spinach, and blend until you have a smooth, green liquid.

Set aside and add remaining milk, oil and “egg”.

In a large bowl, empty the flour mix and gradually whisk/beat in the liquids until completely smooth, adding any optional extras as you choose.

Now heat a little oil in a frying pan over a medium heat, then add a little batter when hot.

The batter will be pretty thick – that’s how you get thick pancakes 😛 – so if you want them closer to crepes, just thin out the batter with more liquid (milk/water) and continue.

Make your pancakes, flipping once. They should be nice and green :).

Next step: decorate!!

Of course Pat’s were drowned drizzled with syrup 😛 – though it was only Agave 🙂 – which he seemed to like a lot!! Does this mean I can convert him?? Just kidding, Pat..
